Couvert (cover charge): what it is and how to charge it
A couvert is a separate charge for a starter service offered before the main order — such as bread, spreads, olives or live music — that the guest can accept or decline, and that must be clear on the menu.
How the couvert works
The couvert is optional: the guest only pays if they accept the service. For transparency the amount must be shown on the menu, and the item is rung into the tab like any other.
